Blueberry Vinegar

1 c Ripe blueberries
2 c White vinegar

In a medium saucepan, bring the vinegar to a boil. Turn off the heat and add the blueberries.

Allow to cool, then transfer to a container. Drape a towel over the container so that it is completely covered. Let sit for one week in a cool, dry place.

Strain to remove the skins.

Yields 1 pint or about 8 servings.
