Berry-banana-walnut Bread

1 1/2 c. all-purpose flour
3/4 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
2 beaten eggs
1 c. sugar
3/4 c. mashed strawberries or raspberries (about 1 1/2 c. whole berries)
1/2 c. mashed ripe banana
1/4 c. cooking oil
1 1/2 tsp. finely shredded orange peel
1 c. chopped walnuts

In a bowl combine flour, cinnamon, baking soda, nutmeg and 1/4 teaspoon salt (optional). In another bowl stir together eggs, sugar, mashed berries, banana, oil, orange peel. Add flour mixture, stirring just until combined. Stir in nuts. Pour into a greased loaf pan. Bake in a 350 degree oven for 60 to 70 minutes or until a toothpick inserted near the center comes out clean. Cool 10 minutes. Remove from pan; cool on a rack. Wrap and store overnight. Makes 1 loaf (18 serving). Blueberry-Banana-Walnut Bread: Prepare as above, except omit strawberries or raspberries and stir in 1 cup fresh or frozen whole blueberries with the nuts.
