Strawberry Liqueur 3 c Fresh strawberries
1/2 c Powdered sugar
2 c Vodka
1/2 c Sugar
2 tb Water
Version of Liqueur de Fraises. Wash and stem berries; pat dry. Halve
berries and place in an aging container. Cover berries with powdered
sugar. Pour vodka over sugared berries; stir just to combine. Cap
container and let age in a cool, dark place for 2-3 weeks. After
initial aging period, combine sugar and water in a small saucepan.
Heat and stir until the sugar is well dissolved. Set aside to cool.
Strain berry liquid through a wire mesh strainer placed over a large
bowl. With the back of a wooden spoon, crush out liqueur liquid
caught in the berries. Discard berry pulp. Restrain mixture through
cloth to further remove sediment. Add cooled sugar water to strained
strawberry liqueur; stir to combine. Rebottle as desired. Age for at
least 1 month before serving.
