Blueberry Orange Bread 1 c. sugar
1 egg
2 c. flour
1 tsp. soda
1/2 tsp. salt
3 tbsp. grated orange rind
1/2 c. orange juice
2 tbsp. margarine
1/4 c. boiling water
1 c. blueberries
Cream sugar and egg. Sift flour, (reserve 1/4 cup to put over blueberries) soda, salt and blend. Add orange rind, juice, and margarine in 1/4 cup boiling water. Fold in blueberries. Bake in greased and floured loaf pan for one hour at 350 degrees. When slightly cooled glaze with 1 tablespoon orange juice, 1/2 cup powdered sugar.
