Mulberry Sumac Jelly

1 qt Mulberries
Sugar
6 Sumac heads
Water
1 pk Pectin (liquid)

Crush mulberries to extract juice and hang in a jelly bag. Allow all the juice to drip through but DON'T squeeze the bag to get more juice. Mix the juice with equal parts of white sugar, approxiamately 1 cup of sugar to 1 cup of juice. Set aside. Cover 6 heads of sumac with warm water and vigorously swish ( a technical term) the sumac seeds for 5 minutes. Strain through cheesecloth or a clean kitchen towel. Mix the sumac extract with the mulberry juice and add 1 pkt of liquid pectin. Follow the directions of the package to get a jell. Ball makes a quilted jar pattern that shows off the jelly to great advantage.
