New Jersey Blueberry or Cranberry Muffins 1 c Whole wheat flour
1 c Sifted unbleached flour
1/2 c Sugar
2 1/2 ts Baking powder
1/2 ts Salt
2 lg Egg whites, well beaten
1 c Skim milk
1/3 c Vegetable oil
1 c Fresh (or thawed) well drained blueberries OR cranberries
Sift the dry ingredients into a bowl.
In a small bowl, combine milk, egg whites and oil. Add to dry
ingredients. Stir briskly until all ingredients are blended. Gently
stir in blue berries OR cranberries.
Preheat oven to 400 degrees.
Line muffin tins with 12 paper muffin cups. Fill 2/3 full and bake
