Precooked Wheat Berries

1 c Wheat berries
3 1/2 c Cold water

Combine the wheat berries and cold water in a saucepan. Cover and soak overnight.

Boil the wheat berries in their soaking liquid for 15 min for parboiled wheat berries; 50-60 min for fully cooked wheat berries. Add water as needed as they cook.

Drain and cool thoroughly. Store in the refrigerator in a container with a lid or in an airtight plastic bag.

Parboiled wheat berries will keep for 3-4 days; fully cooked wheat berries will keep for up to 1 week. Do not freeze; they will turn mushy.
