Berry Smoothie

1/2 md Banana
1/2 c Unsweetened apple juice
1/2 c Fresh blueberries -blueberries; blackberries, raspberries or strawberries
1/4 c Plain nonfat yogurt or soy yogurt; optional

Put banana and half the apple juice in a blender or food processor fitted with steel blade. Blend, adding remaining apple juice gradually until smooth. Add berries and yogurt if desired and blend thoroughly. Serve immediately.

Variation: Instead of berries, substitute other fresh fruits such as nectarines and peaches. Or substitute other fruit juices for the apple juice.
